Mojang publishes an official step by step guide for legacy accounts. If you already own a Microsoft account from Xbox, Outlook or anything else, you can use that one instead of creating a new one. The process takes a few minutes and only needs to be done once.
No. Without a working Minecraft account, the client cannot authenticate, which means it cannot connect to any server, ours included. The migration is a Mojang and Microsoft requirement that lives well above the hosting layer, so there is nothing a host can do to bypass it.
