Starbound is a 2D sandbox space adventure with procedurally generated planets, factions, and ruins. It often gets pitched as Terraria in space, which is fair enough as a starting point, but the comparison stops being useful pretty fast. Instead of biomes on a single world, you hop between entire planets, each with its own gravity, climate, fauna, and questlines.
No two playthroughs look the same, and a multiplayer server amplifies that effect. Every member of the crew lands on a different rock, and the universe ends up looking like a shared scrapbook of weird discoveries.

Melee, ranged, energy weapons, elemental status effects. Fights are not deep in the Dark Souls sense, but the toolset is wide enough that two players almost never fight the same way.
Human, Apex, Avian, Hylotl, Glitch, Floran, and Novakid. Each one has its own lore, ship interior, and starting questline. Glitch are medieval android knights that think they are in a fantasy novel. Apex are primates running an authoritarian state. Pick whichever fits the campaign your group wants to roleplay.
Resources turn into furniture, gear, vehicles, and entire structures. The Matter Manipulator, the tool you start with, handles mining, painting, wiring, and most of the building work in one device.
Multiplayer is where Starbound really stretches. Boss fights are far more manageable with backup, and the modding scene has produced everything from new races and weapons to total overhauls. A dedicated server is the cleanest way to keep mod versions synced across the group.
